Is there a reason to distinguish between おう/おお, but not between　ず/づ? I find non-roundtripping romanisations a bit iffy.

Not really, no, it just sort of stuck this way. I guess it'd be more consistent if we spelt it "ou" always. As to being round-trippy, it's not an input method, just a pronunciation guide, so the less stupid misguided ideas about some sort of magical difference between づ and ず it gives (I have actually seen idiots arguing they're pronounced differently), the better. Knowing the zu is づ does you no good unless you know it's because of 月 anyway.
