If kyonshi hasn't been in use previously, I'd like to keep it open as it seems ripe to be used by something else.

As for the Chinese, romanization of that is outside my area of expertise, though gut feeling would be jiang_shi. Anyone have comments?

Don't think it was ever done.

Do we have a Chinese romanization policy? I didn't see anything in the Romanization help file. If there's a choice between Cantonese and Mandarin do we favor one?

I'm all for favoring Mandarin Chinese, since Cantonese is considered informal by most people (I am a native Mandarin speaker who grew up in a Cantonese-speaking area). Unless a term originated from and is mostly exclusively used in Cantonese-speaking regions, it should be romanized according to Mandarin conventions.

As for the actual tag, "Jiangshi" is one phrase and is usually spoken without any pause, so aliasing to this tag is a better idea than "jiang_shi", since it's equivalent to the difference between the English "house wife" and "housewife".
