The first 2 seem more like what I understand to be her character.

Personally think even if her internal reaction was 2, she is more likely to show 1.

If you hear about Kasen without reading Wild and Horned Hermit, you might think she's an annoying nag who can't stop mentioning ascetic training. The truth is, Kasen barely ever talks about it because she's barely even a Hermit. For most of the manga, she actually didn't even know a Hermit was a type of priest, she just figured "oh, hermits are people who live a long time because training, this is the perfect cover." Then reality ensues, and Reimu gets close to blowing her cover every other chapter just by knowing things about religion that Kasen doesn't - and Reimu isn't even that good of a source for that kind of knowledge! Fortunately, Reimu is trusting enough that Kasen can often nervously bullshit her way out of it, and Reimu will go "That sort of makes sense, I guess!! I'll buy it!"

That's the real Kasen. She shows up and goes "I'm a Hermit, everybody!" while acting kinda-sorta like one, and everyone just shrugs and goes "Okay!" Then she spots a sweets shop, walks out of it with giant grocery bag full of cakes, and sets out to solve this week's mystery while shoving them all into her mouth as fast as she can chew them. Her personality is really a lot more like #3, with a touch of #1.
