Player can freely chose the gender and the name of main character of the game (fate/extra). There is no default name in the game. AFAIK Kishinami Hakuno is name chosen for other publication of fate/extra.

because he/she isn't explained which is the actual gender for Kishinami Hakuno
i've just read a few chapter about fate/extra manga, that stated that Kishinami Hakuno is actually a npc that created from actual body on earth.

CMIIW i don't know much about Fate franchise cz i don't play the games

If you didn’t know In encore male hakuno was confirmed to be a reincarnation or copy of female hakuno also known as hakunon
