Funny enough, Florence Nighengale is the only Berserker who is completely sane while under her Mad Enhance. It doesn't so much rob her of her sensibilities, but it completely focuses her on her goals of helping people and fighting the deplorable state of war. Which is also why she's the only berserker with an ARTS Noble Phantasm, something that normally requires a lot of focus since it's normally a magic spell or ritual.

The only one ? What about Kiyohime, Vlad,Beowulf,Spartacus or Kintoki ? Those remain more or less sane due to the nature of their madness or the low rank of ME. And Nightingale is not the only berserker with arts NP, we have Vlad, Asterios and Caligula.
