It's kind of hard to say on the "bloodiest" front, but there are ones where they split people in half. The one that gets the most attention, though, is the one where Cassie Cage pounds the victim's balls (or vagina) into bloody paste. (Mostly because it was "censored" by altering how far inside the torso the attack actually digs in spite of there being nothing actually removed from the game...)
