For me, the ideal Team RWBY band would be based off Gojira's lineup (the band, not the kaiju).

Ruby: Joe Duplantier (guitars and vocals), to go with the siblings dynamic
Weiss: Christian Andreu (guitars)
Blake: Jean-Michel Labadie (bass)
Yang: Mario Duplantier (drums), again to go with the siblings dynamic.
