also ive always wondered what plausible science would be behind a lightsaber, the fan base is huge so im sure theres something agreeable, but i myself cannot fathom how retractable plasma works

Nothing, as for now we have no way to determine the saber size and avoid it to go to the moon (longsaber is loooooong)
and we have no source suitable fot powering such a thing.

i had thought it was mentioned somewhere (in one of the books or something) that theres a small metal rod in the center that extends and is retracted that the plasma gathers around

Few people ever seem to be able to draw the blade correctly. It's supposed to always be white in the center and the color goes around it, not one solid color.

...Once focused by the crystals, the plasma was sent through a series of field energizers and modulation circuitry within the emitter matrix that further focused it, making it into a coherent beam of energy that was projected from the emitter. The blade typically extended about a meter before being arced by the blade containment field back to a negatively charged fissure ringing the emitter, where it was channeled back to the power cell by a superconductor, completing the circuit.

Michio Kaku covered how this device was feasible. Through the use of a plasma emitter and a perforated ceramic 'blade' tube. Retractability was not an efficient feature, but entirely possible.

The difficult part is actually having an appropriate power source within the limited space of the handle.

Also, as a side note: plasma =/= laser. It would not continue off into space. It would quickly dissipate into a harmless cloud and then nothing as it moved away from the source. This is the primary reason plasma weapons are not a reasonable option at this time. Although, smoke rings appear to be a possible key to unlocking the potential. But that's another topic.
