I was under the impression that the Elixir just erased your presence from history so when you die, your body doesn't regenerate but is rather replaced by another one. If she does have a child then I guess it will still be mortal. If you want to we can discuss this.

No, it does regenerate, unless completely destroyed - at which point a respawn will occur.
It makes the person who takes the Elixir literally eternal - no ending. According to ZUN, that which has no ending has no beginning, and that which has neither ending nor beginning has no history.
