Ayu Sweetfish are a species of fish found in East Asia, including Japan. As it grows, it travels back and forth between rivers and the sea. They are characterized by their greenish body color, yellow markings behind the gill cover, and adipose fin. They have a distinctive aroma, earning them the nickname "Kou Gyo (香魚 = fragrant fish)". They are delicious when grilled with salt.
