Theory I read once was that instead of wanting to be like the male MC and self-insert as him, they want to take it away from the MC out of envy and self-insert as what they perceive themselves to be (ugly, fat, bastard).

Not necessarily. Some people do self insert as the guy doing the ntr (a.k.a the guy fucking the girl), I feel like most of the people who like ntr are self inserting as the mc (cuck). Some people also self insert as the girl.
Also not all ntr follow that configuration (a girl being taken away from the mc). There's also yuri ntr, yaoi ntr, reverse ntr (the guy cucking the girl instead), etc.
