Well, working with chocolate requires a certain amount of magic so it's not surprising that they'd be somewhat naturals at it. It took a lot of work to figure out how to process chocolate to what we have today, and even then if you think you can just trivially melt and rework it you're likely to split the chocolate (at which point there are ways to restore it somewhat, but it's never the same). At the very least you want to use a double boiler.
