    Cabbages mixed in crunchy batter with shrimp and octopus and pan fried udon(?) with some kind of brown sauce on top. At least that's how it was in Hiroshima.

    Okonomiyaki is absolutely awesome. I just regret that it and other Kansai cuisine (and genuine ramen, for that matter) haven't made the same penetration into American culture that sushi has, as they're a much less expensive alternative, and quite tasty. Sadly, you just can't find any of that unless you're on the East or West Coast, it seems.

    There are a total of 2 places in Austin with genuine ramen. There is a third that is too salty to even call ramen.

    There is one takoyaki stand here, but it doesn't even compare to the authentic food stall varieties.

    As for okonomiyaki, there are a couple of places that serve it but as an appetizer rather than a main dish. I have yet to try them since they tend to be served at dinner, and I'm not one to go out to eat at night normally.
