Since the genie is not that ancient, you can just ask her to 'create a living, growing tree that grows all kind of gemstones as fruit in a consistent growth speed to grow berries of same size and takes material from the surrounding as material'.

Gemstones are not that hard to convert to money compared to gold; you can literally sell them via amazon or etsy (as long as it's within 'normal' size. Nobody would buy a 30-pound rough diamond/68038.9 carats, but they'll surely buy some uncertified 3-4 carat loose stones.) The only thing you need to make prior to selling them (to drive up the price) is to take them to some appraisal to get them certified. You can practically indefinitely sell some semi-precious stones like quartz, agate, onyx and carnelian (silicon, just feed glass shards/sand to the tree), or you can go precious stones like ruby and sapphire (aluminium oxide with chromium for ruby and titanium for sapphire, feed it foil wrap and paint flakes), and diamond (carbon from exhaust and air).

The 'consistent growth speed to grow berries of same size' part of the wish was meant to prevent the gems from being grown in thousand of years, instead being weeks at most.

You'd also clear some pollution while you're doing it, so win-win.

If you can opt to a certain scenario, I'd wish to go back in time (maybe 10-15) retaining my actual knowledge and start investing in Apple or Facebook. That will get you to either get lectured about volatility or got altcoins from unknown source that cannot be tracked in the blockchain.
ALWAYS ask for a physical, concrete object when dealing with anything or anyone, that's the first rule of business. E-money, stocks or any valuable certificates (paper money included) runs on the principle of 'trust and promises', and they can lose value in a flash. Precious metals, gemstones and the likes cannot ever lose value save for certain extremely rare event like gold meteor shower landing on earth.
