Seems like 白菜 can be read either hakusai, meaning napa cabbage, or pakuchoi, meaning bok choy. But I'm pretty sure what we're looking at here is the former (which is the standard sense in Japanese anyway).

I can confirm it's subsp. pekinensis (i.e. Napa), thanks to the distinctive elongated shape of the cabbage head. Chinensis is smaller and grows in clusters instead of heads.
