Her immortality is mever stated to work that way, the joke is definitely that Mokou is an infinite source of (potentially cooked) meat, that is definitely still attached to her.

I think this is canon based on the conversation between Remilia, Sakuya, and Mokou in IN. Remi tries to convince Sakuya to eat Mokou's liver to gain immortality which means that Mokou can lose and regenerate lost body parts should the need arise.

Well now ...rather than "Remilia tries to convince Sakuya"it was "an open-ended-minded invitation,certainly respectful ,never once insistence nor any repeat or bringing-up by anyone after-IN...
It is treated,more by Remilia(household-family-mansion Mistressa)and less by Sakuya (head-maid/head-of-security) as ...just about... a very curious and new discover-ful opportunity(in the context and consequences and tone and themes/sub-themes in Imperishable Night/IN/Touhou 8 - Extra Stage ending - Scarlet Team ending - Remilia & Sakuya " .
Truly not a nitpick ,also because Sakuya did more or less made her mind and her Mistress knows her to a good degree,though not witgout some mistery ,stayed a long time by Remilia and Flandre(Scarlet of the Scarlet Family/Household),their Mansion,hinted to be the longest "Alive and Still in-Mansio Resident".
It is along the lines and matching about :"(Remilia)Sakuya why don't you try to...then we can live together on and forever together..." .
Remilia did not even propose sa certain amount of inisistence and insinuation to goad "(Aaah/oooh/woow?etc.)...it would be wonderful/faboluous...is it not fantastic.... i might order you if you choose/dare/take a step
Sakuya's reply similarly followed and corresponded the "mostly-normal tone and certainly respectful reply".
