There are gay-bars with female staff, they just work there.

You don't go to a gay bar to hook up with the staff, you usually don't go to a regular bar to hook up with the staff either. There's no reason for a gay bar to refuse staff of a certain gender regardless of its intended clientele, it's not a brothel.

There is if said clientele simply doesnt want to be served by the other gender. There are plenty of places like this here in Vegas. You dont go to Hooters for example to be served by hot dudes in thongs, you go to stare at the girls in big tits.
Plenty of strip clubs here only hire women cause guys dont want to be served by other guys cause "thats gay man, i aint homo".
Same thing for some gay bars. I'm NOT SAYING that there arent gay bars that dont hire both genders, I'm saying that as the same for strip clubs and gay bar, there exists those that only hire a specific gender cause there are those clienteles that simply not wished to be serviced by the other gender.
Going there to "Hook up" isnt the issue here. Plenty of lesbians simply just hate men and plenty of gay guys simply just dont like Women.
I never once said anything about why people go to these places to hook up. Its just simply customers not wanting to mingle with those of a specific gender they dont like and/or hate.
We have both lesbian bars and gay bars that only hire specific genders simply because a lot of cleintele just dont want to mingle with those of another gender. Simple as that.
Strip clubs that only want to see women cause "its gay" if there are dudes there. Doesnt matter if the guy isnt dancing and just a bartender, they'd rather see a female bar tender even if she isn't dancing.
