The GameCube version of Twilight Princess is supposed to be accurate one, and Link is left-handed there. I know at least that Skyward Sword link is canonically right-handed.

As far as I can tell every game made after Wii twilight has him right handed. I don't like it, but it seems they have just defaulted to that now.
