The correct way (tail standing) doesn't convey the emotion to most reader, except they own a cat or know cat body language. Tail whipping (not wagging) in cats means either they're curious, feeling playful or focused. In that case you can write it off as she's focused in the onigiri without altering the picture's meaning too much.
