Issue is that there isn't many arts of her at all, I just stumbled across this one and was hoping for more but like most NPCs we'll see almost none

Give it some time. She's a quest character after all, so gets no promotion from Hoyoverse. Dunyarzad is/was in the same boat.
However, seems like someone else made a tag already.

Jeht/Clearwater looked better than more than half of Sumeru's playable characters, what a waste...
